"秋色のアフタヌーンティー"
ザ・キタノホテル東京がお届けする
"オールグルテンフリー" のアフタヌーンティーです。

米粉を使ったお菓子は最近メジャーになってきましたが、
まだまだ小麦と比べればフロンティアな部分の多い食材です。
当館シェフパティシエの伊東友一が食感や時間経過など、様々に研究を重ね、細部に至るまで手をかけた取り合わせ。

丁寧でやさしい味わいに、

秋は信州の葡萄や、栗なども使用。

当館の総料理長・加茂健は、
非常にユニークな経歴を持つシェフです。

日本でキャリアをスタートさせた後、渡欧。

修行を重ねていたスイスで運命的な誘いを受け、

カンボジアはプノンペン、
シアヌーク殿下のご親戚の邸宅を改築した「ラ・レジデンス」の初代総料理長として、
その後14年間をカンボジアで過ごしました。

カンボジアでは、エスニックな食材やスパイス、ハーブなど、豊かでユニークな食文化に触れ、
今の加茂の料理にも多くの影響が残っています。

今回はソフィテルホテル・プノンペン @sofitelphnompenh において、
加茂の凱旋ディナー、そしてブランチの催し "The Return of Chef Takeshi Kamo" が行われます。

コロナ禍を機に帰国して以来、
7年ぶりのカンボジア。

たくさんの方が楽しみにしてくださっているとのこと。

かつての盟友 @chef_driss_pp と共に、大いに腕を奮います。

Our Executive Chef, Takeshi Kamo @chef_takeshikamo , has followed a truly unique culinary path.

After beginning his career in Japan, he trained in France and Switzerland—where a fateful opportunity led him to Phnom Penh, Cambodia🇰🇭.

There, he became the founding Executive Chef of "La Résidence", a private residence once owned by relatives of Prince Sihanouk. He would go on to spend the next 14 years immersed in Cambodia’s rich and distinctive culinary culture.

His time there—marked by bold spices, vibrant herbs, and deeply rooted traditions—continues to influence his cuisine to this day.

Now, for the first time in seven years, Chef Kamo returns to Cambodia for a special homecoming event at Sofitel Phnom Penh @sofitelphnompenh :

a celebratory dinner and brunch, joined by his longtime friend and culinary partner, @chef.dori .

After an unusually hot summer, we now welcome the season of harvest.

Our third Kitano Finds Japan focuses on Nagano, the birthplace of our founder.
Enjoy the rich flavors of Shinshu at all three of our venues:
