【Restaurant】Kitano Finds Japan Vol.2

One of our missions is to highlight and share the extraordinary ingredients found across Japan.

This spring, we launched a new series: Kitano Finds Japan, to explore regional culinary treasures through special menus across our dining venues.

Following the success of the first edition, which featured Hiroshima, we are proud to announce that Saga will be in the spotlight starting this June.

Main dining “LʼOrangerie Koh-an”

Fagottini with Ariake Nori and Akaito Saffron® 3,600 yen

Focus Ingredients: Ariake Nori, Akaito Saffron®

Saga’s Ariake Sea, known for having the greatest tidal range in Japan, produces nori (seaweed) of unparalleled quality—rich in aroma and delicately smooth on the palate. We generously incorporate this premium seaweed into fagottini (pyramid-shaped stuffed pasta), served with a saffron espuma. The saffron used is Akaito Saffron®, a revival of saffron cultivation dating back 300 years, grown in Saga’s terraced rice fields under ideal conditions. This unique saffron, cultivated with a fusion of cutting-edge technology and traditional handcrafting, imparts a refined aroma and elegant color that beautifully complements the seaweed. The resulting harmony evokes the spirit of Saga’s Sea and mountains.

Salmorejo with Eco Smile Tomato from Saga 2,200 yen

Focus Ingredient: Eco Smile Tomato from Saga

This chilled Spanish-style soup is typically made from sun-ripened tomatoes, and here we use Eco Smile Tomato from Saga, a variety known for its large size and perfect balance of sweetness and acidity. Instead of the traditional toppings of ham and boiled egg, our version adds smoked salmon, summer vegetables, and croutons for a refreshing Kitano-style twist—perfect for a light, summery meal.

Original Cocktail “Wakaba” 2,000 yen

Focus Ingredient: Ureshino Green Tea

This refined summer cocktail celebrates the depth and vibrancy of Ureshino tea, a premium green tea from Saga with a rich aroma and deep umami. It is blended with gin infused with sake lees from Amabuki Brewery, dry vermouth, pineapple juice, and cold-brewed green tea syrup. The result is a clean, refreshing drink with a subtle depth from the sake lees—a perfect taste of Japan for the warmer season.
